Conor trained under Michelin-starred chef Paul Rankin at just sixteen and went on to cook in Edinburgh, Belfast, and Auckland, where a formative experience at Rocco sparked his love for bold, ingredient-led cooking. After formal training at Ballymaloe and a pivotal role at London’s Terroirs, he joined Trullo in its early days, was named Head Chef after 18 months, and is now Chef Co-owner—helping shape the restaurant into one of London’s most respected spots, celebrated for its handmade pasta.
